Mexican Slow Cooker Stew

Preparation Time: 15 mins.
Cook Time: 8 hours
Serves: 5

 

Ingredients:

  • 2lbs beef stew
  • 1 small red onion
  • 3 garlic cloves
  • 1 tbsp cumin
  • 1/2 tsp chipotle powder
  • 2 tsp sea salt
  • 2 tsp black pepper
  • 1 4oz can diced green chilies
  • 2 cups beef broth
  • 3/4 cup tomato sauce

Preparation:

  1. place the beef, diced onions, and garlic in the bottom of the slow cooker and turn on low.
  2. add all spices and mix well.
  3. add the chilies, beef broth, and tomato paste, and mix well.
  4. cook on low for 8 hours or until the beef is fall-apart tender
